Ingredients

1 cup gluten-free granola

Tofu topping:

7 or 8 ounces extra firm tofu

1/3 cup maple syrup, more or less, to taste

2 tsp. vanilla extract

Lime filling:

3 firm avocados
4 Tbsp lime juice
2 tsp. lime zest
½ cup light or medium maple syrup, more or less to taste

Preparation

Tofu topping:

Place all ingredients in blender and blend until smooth.

Empty into a small bowl and refrigerate until ready to assemble parfait.

Lime filling:

Place all ingredients in blender and blend until smooth.

Empty into a small bowl and refrigerate until ready to assemble parfait.

To assemble:

Put 2 Tbsp. granola into each parfait glass.

Spoon lime filling mixture on top of the granola

Spoon tofu topping on top of lime filling.

For a larger parfait, repeat the layers.

Garnish with lime wedges and/or blueberries, if available.
