Maple Orange Tofu
Did you know it is really difficult to take good photos of tofu? Well it is for me, especially when the tofu is cooked. This is the reason there is no picture of the finished product posted.
This quick recipe was inspired by my teenage neighbor. A few years ago she told me her favorite way to cook tofu was with maple syrup and orange juice. Of course she did not have written down recipe “oh, you know, I just throw it all together” (teenagers!). Well that works.
Here is what I came up with:
1 tsp. minced ginger
1-2 cloves minced garlic
3 Tbl. tamari
1/4 cup fresh squeezed orange juice
2 Tbl. olive oil
2 Tbl. rice vinegar
2 Tbl. maple syrup
1 block extra firm tofu
Give the tofu block a good squeeze over the sink to release a bit of the water. Be gentle so the tofu does not break. Cut the tofu into 1/2 inch cubes. In a small mixing bowl (one large enough to hold marinade and tofu cubes) combine the ginger, garlic, tamari, orange juice, oil, rice vinegar, and maple syrup. Add the tofu cubes, spooning some marinade over all of the cut tofu. Allow to sit for 30 minutes or more. Preheat oven to 375 degrees. Place the tofu and marinade in an oven proof baking dish. Allow to cook for 15-20 minutes or until all the juice has evaporated. Make sure to stir every 5 minutes or so.
If you like spice, try adding some Siracha sauce.
