1 cup quinoa, rinsed well
½ tsp salt plus more
3 Tbl. fresh lemon juice
3 Tbl. extra-virgin olive oil
1½ cups cucumbers, cut into ¼ inch pieces
1 pint cherry tomatoes, halved
1 cup chopped flat-leaf parsley
½ cup chopped fresh mint
4 scallions, thinly sliced
Salt and pepper to taste

Bring quinoa, 1/2 tsp. salt, and 2 cups water to a boil in a medium saucepan over high heat. Reduce heat to low, cover, and simmer until quinoa is tender, about 10 minutes. Remove from heat and let stand, covered, for 5 minutes. Spread out quinoa on a large rimmed baking sheet; let cool. Whisk lemon juice and olive oil in a small bowl. Season dressing to taste with salt and pepper. Transfer to a large bowl; mix in half the dressing. Add cucumber, tomatoes, herbs, and scallions to bowl with quinoa; mix well. Drizzle remaining dressing over. Season to taste with salt and pepper. Serves 6
