It’s Spring – Eat Your Dandelion Greens

 

 

 

 

 

 

 

 

 

 

You may think of dandelion greens as a common weed you spend tons of time pulling out of your yard. They are really a  highly nutritious, spring green full of calcium, iron, fiber, Vitamins A, E and K, beta-carotene, and lutein.

The flavor of dandelion greens can have a pleasing bitterness. Using olive oil and lemon juice can offset the bitter flavor. Try sauteing or the raw salad recipe below. Melissa from our Front End Department, adds fresh dandelion greens to her morning smoothie. Mix a handful of washed greens, pineapple, squeeze of lemon juice, strawberries, and water.

When shopping for greens choose organic with firm leaves and thin stems.

Dandelion Greens Salad

2 bunches dandelion greens

1 lemon

1 shallot, minced

3 Tbl. olive oil

1 tsp. salt

1 tsp. pepper

Wash and dry dandelion greens. Zest ½ lemon, combine with minced shallot. Juice the lemon. Cover zest and shallot with lemon juice. Allow to sit for 20 minutes. Whisk in olive oil, salt, and pepper.  Chop into matchsticks. Combine greens and dressing. Adjust to taste. Serves 6
